These were so incredibly easy and turned out soft, chewy, and lemony! There are only 4 ingredients. I found similar recipes that also call for lemon juice and lemon zest, but there was *plenty* of lemony flavor without those. I did find it helpful to chill the dough before rolling it into sugar.
